Maihna, Rawtuoi, Behna – Changalhme Combo

Maihna (Pumkim leaves), Rawtuoi (Bamboo shoot), and Behna (Bean leaves) can be cooked together as changalhme—a traditional Hmar dish made with sathu (fermented pork fat), changal (a local solution used in place of baking soda or baking soda itself can be used as well), salt, chilies, and water. Alternatively, each ingredient can be prepared separately as a stew, fried, or by simply boiling them in water and adding desired seasonings.
